I know the new learning mode poster is integrated with the fast poster but how do you go about training it on a new platform that's not included in the currently supported platforms? How do you create the definition files?

It can be done, but there is no GUI for it. If you go into your scrapebox folder, then the addons folder, then the cpengines folder, you will see all the engine files.
Basically you can analyze the current engine files, then look at the platform you want to train and build your own engine file. If that makes sense, then your set, if what you see in the engine files doesn't make sense and you don't know what your looking at in the sites html, then you can't train them. There isn't much middle ground.

Ok, so what about the "Learn" button in the manual poster? What exactly is that used for?

You can try and train a platform using the single threaded poster. It is somewhat limited, and I never really had much success with it. However some people do use it. The issue is it uses internet explorer rendering engine, which means its single threaded, and IE is highly prone to problems.
